Simply Celery Soup
This soup is full of healthy soluble and insoluble fibre and a special pectin based polysaccharide called apiuman which helps protect the stomach lining and reduce ulceration. Low in calories, celery has an alkalising effect on the body that helps reduce inflammation. Touted as beneficial for the cardiovascular system, it also helps reduce cholesterol and bring down high blood pressure. It has a wealth of antioxidants including vitamins C, K, folate, betacarotene and flavonoids, as well as potassium to support your health.

Instructions
  1. Wash and chop the celery, carrots and potatoes into small pieces.
  2. Measure out the olive oil into the Thermomix bowl.
  3. Peel the garlic and chop briefly using speed 10.
  4. Select 24 mins on the timer and 98°C on the temperature speed 1 and start to sauté the garlic.
  5. Add the celery, carrots and potatoes and sauté for 6 mins.
  6. Add water to the 2-litre mark and continue to cook.
  7. After the program is completed add the vegetable stock and blend on speed 10 for 2 minutes.
  8. Adjust taste and enjoy your soup.
